Chicken Fritters

Welcome to 
Pink Glitter!

Thanks so much for opening this 
post.....I'm glad you're joining me 
today.

Let's get started making 
Chicken Fritters!

Ingredients:
4 cups of boneless, skinless chicken
( I used thighs but boneless, skinless chicken breasts would work)
2 eggs
1/3 cup mayo
3/4 cup flour, all purpose
1/2 cup grated cheese, use your favorite type
salt & pepper, to taste

oil, to fry the fritters 



I placed my chicken on a cutting board....


.....and then chopped it up into 1/2 inch 
pieces.



Chop, chop, chop!

Then add eggs, mayo,


....flour....


....salt and pepper.



Give the entire mixture a good, big ol' stir!


If you think the mixture needs a bit more flour
so everything is well coated, sprinkle in a tablespoon or two more now.

Stir, stir!

Do these fritters sound good, Glitterinas?



Now you are ready to scoop and fry.

Heat about 1/2 inch of oil in your favorite skillet.
I like a lid when I fry things to help with popping oil.

Ouch, be very careful, that can hurt!

I do not have any pictures of the frying fritters 
because that oil is hot and I was watching 
closely....

Fry 4 or 5 fritters at a time 
for 
3 minutes on each side. 

I used a medium ice cream scoop to 
transfer fritter batter from bowl to skillet.

If you wanted these to be an appetizer, 
use a spoon to drop them into the oil for frying.

As you work on frying consecutive batches
watch your heat.....it can get too hot and burn 
the fritters.

....and then the rest!


I don't fry food often because 
it's not the best thing for our hearts, it's 
crazy messy and popping grease does not feel good!

So while these little buggers were frying 
husband kept encouraging me on with ....

"Oh wow, that smells so good!"

"I can't wait to eat those!"

"How long has it been since you fried something?"

Good.....

and 

I really do not remember

......were my responses!

Hee hee!!

I served the fritters with an aioli sauce.

It is simple to whisk up....


....in a small bowl, add

1/3 cup mayo
1 T. minced garlic 
(or a fresh garlic clove, finely chopped or pressed)
1/2 T lemon juice
salt & pepper to taste

Whisk, whisk, whisk!
I love using my small whisk!


I made the aioli in the bowl I served it in.

This aioli is really good on other foods, too.

roasted veggies

baked potatoes

grilled shrimp

Just taste it and you'll think of other foods 
it would be good served on!

Here's dinner....


Chicken fritters with aioli
served with corn and black bean salad.

A colorful and yummy dinner!

They were good and husband enjoyed having 
something fried!

I love him lots and lots.....that's how he rates messy food!

Oh, and I have plenty of wipes to help clean up 
after the frying is done!

In The Kitchen With Emery

Welcome Glitterinas!

Thank you so much for taking a moment to 
open this post at
Pink Glitter!

Miss Emery is sharing a yummy snack recipe 
with you today.

She's in the kitchen making 
Bacon Knots.

Let's join her!

First, place parchment paper on a baking sheet.


Gather the ingredients.

Bacon....


garlic powder....


and fresh cracked black pepper.


Take a strip of bacon and fold it into 
a flat knot.




Emery made 4 bacon knots.
Make as many as you want....
they are yummy and simple to make.

Next, sprinkle each knot with 
garlic powder....


and give each knot a hit of 
fresh cracked black pepper.


That's it!

The bacon knots are ready for the oven.



Place them into a pre-heated 350 degree oven 
for 25 minutes.


While waiting for the knots to cook
choose a serving plate and get out the 
fresh parmesan cheese.



This is the serving plate chosen for today's snack.


When the timer signals that the 
knots are ready....

......remove them from the oven...


.....and sprinkle them with some fresh 
parmesan cheese.

Place the knots back into the oven for 
2-3 minutes.

Yummy!
Here they are in all their 
cheese covered glory!


Served and enjoyed!



Emery and Pops, 
who both love everything bacon,
declared these bacon knots

Please Don't Eat the Strawberries!

I usually encourage the consumption of 
fruit that's as delicious as strawberries.....

.....but not these pretties, Glitterinas!

I like to use these faux berries to decorate 
my dining room table!

Let me share with you....


I layered a few favorite tablecloths and 
gathered some red napkins, a few pieces of 
white ironstone and some other pieces from around the house.


After some mixing and stacking.....


......strawberries stacked here and piled there.....


.....this is how the table ended up!




This tablecloth ended up folded and on the library table. 
 I like it here!


One last addition.....
a small grapevine wreath!


This table is bright and happy.

But, please, don't eat the strawberries!


I like all the happy red....

I can hardly believe that summer is over 
and the kids are heading back to school!
