Gigi's Meat Loaf

I had a couple of requests 
for my meat loaf recipe....

so, here it is!

Nothing flashy or anything 
like that....

just a reliable ol' recipe 
for a week night dinner.

The leftovers do make a 
nice sandwich the next day for lunch!

Here we go, Glitterinas, let's make 
some meat loaf.


Begin with a pound of lean ground beef in a 
mixing bowl.

Add two eggs....


...... 3 shakes of worchestershire sauce....


Mix well.


Next, add 2-3 tablespoons of catsup,
I don't measure this, I just give it a good squirt!

A smaller squirt of plain, yellow mustard...

1 tablespoon of minced onions....

1 tablespoon of parsley....

all go into the mixture.


Mix, mix, mix.....

sometimes I use my hands to mix....

but when I'm taking pictures,
the spatula does all the work!


The last ingredients added are 

4 tablespoons of plain breadcrumbs
and 
4 tablespoons of panko breadcrumbs.


Stir well and spoon mixture into 
a loaf pan.


I don't pack it down too hard....

just lightly, so it will bake into a nice loaf 
that will slice and serve well.


My husband's favorite food in the world is
bacon.....

so, a couple of strips of bacon go on top....


.....with a squiggle of catsup!


Gigi's meat loaf is ready for the oven!

Bake at 350 degrees for about 55 minutes 
and check for doneness....

the edges should be bubbly and brown and the 
bacon should look cooked but won't 
 be as brown and crispy 
as when it's cooked in a skillet.

Bake for an additional 10-15 minutes 
if needed for doneness.

Remove the meat loaf from the oven 
and let it sit for 15 minutes before serving.

Serve by slicing the meat loaf just like you'd
cut a loaf of bread.

Enjoy!

Refrigerate any leftovers and 
enjoy them the next day in a yummy sandwich.
